This salad is said to be the one Jennifer Aniston ate on the set of Friends. This version adds extra vegetables and protein, making it a filling meal for a bariatric diet.
Quinoa, chickpeas, chicken, feta and fresh herbs make it a practical option for lunch meal prep.

Ingredients
- 170 g quinoa
- 500 ml water
- 280 g grilled chicken breast, diced
- 1 tin (400 g) chickpeas, drained and rinsed
- 50 g red onion, diced
- 1 cucumber, diced
- 60 g baby spinach, chopped
- 75 g feta, crumbled
- 30 g walnuts, chopped
- 15 g fresh parsley, chopped
- 6 g fresh mint, chopped
Dressing
- 60 ml lemon juice
- 60 ml olive oil
- Salt and pepper to taste
Method
- Rinse and drain the quinoa. Place the quinoa and water in a small pan and bring to the boil. Reduce to a simmer, cover and cook for 15 minutes. Fluff with a fork and leave to cool for 5–10 minutes.
- Place the remaining salad ingredients in a large bowl and toss to combine.
- Whisk the dressing ingredients together.
- Pour the dressing over the salad and toss. Serve straight away, or portion into containers for lunch meal prep.
